CUCUMBERS

Lime Cucumber Salsa

1 large cucumber, seeded and finely chopped
1 to 2 garlic cloves, minced
1 jalapeno pepper, finely chopped
3 green onions, sliced
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 tablespoons olive or vegetable oil
1 teaspoon grated lime peel
½ teaspoon salt, optional
½ teaspoon pepper

In a bowl, combine all ingredients. Refrigerate for at least 2 hours before serving. Yield: 2 ½ cups.

 


Cucumbers with Ginger Sesame Dressing
From Alison Rosen

3 cucumbers, peeled, seeded and thinly sliced
3 T. toasted sesame seeds
1/3 c. sugar
1/3 c. rice vinegar
3 T. soy sauce
2 T. sesame oil
2 T. fresh grated ginger

Wisk all ingredients (except cucumbers). Toss with cucumbers, chill before serving.

TZATIKI
A traditional Greek salad

From SPF member Yvonne Milspaw
For a nice cucumber salad, try Tzatziki, a traditional Greek salad.

1 cucumber, peeled and chopped fine
1 cup plain yogurt
1/2-1 teaspoon garlic powder, or finely chopped garlic clove
1/2 tsp dried dill or mint
1 -2 tsp olive oil
1 tsp vinegar
dash salt if needed

Mix well, A very cool and refreshing salad that is good with grilled meats.

CUCUMBER ONION SALAD

5-6" cucumbers, thinly sliced
1/4 C sweet onions, thinly sliced
2 T granulated sugar
1/4 C cider vinegar
salt and pepper to taste
2-3 T fresh dill, chopped

1. Place sliced cucumbers in bowl in layers and sprinkle each layer with salt; set aside for approximately 30-45 minutes
2. Pour off cucumber liquid and rinse with water; drain
3. Place rinsed sliced cucumbers and onion in bowl
4. Sprinkle mixture with sugar, black pepper and cider vinegar; mix well
5. Garnish with chopped dill
Serves 6


FREEZER PICKLES

7 cups cucumbers, peeled and sliced
2 C sugar
1 C white vinegar
1 T kosher salt
3 onions, finely chopped (optional)
1 green pepper, chopped (optional)

Mix all ingredients together. Pack into containers and freeze. Defrost and enjoy.


SUMMER SALAD

1 lb cucumbers
1 lb zucchini
2 t salt
1/4 C wine vinegar
1-1/2 lb ripe tomatoes
3/4 C chopped red onions
oil
salt and pepper
2 T chopped mint
1/4 C chopped parsley

Peel, seed, and chop the cucumbers. Wash and chop the zucchini. Toss them together with the salt and vinegar. Allow to sit for 30 minutes. Meanwhile, peel, seed, and chop the tomatoes. Drain the cucumbers and zucchini and toss with the tomatoes and onions. Add oil and more vinegar to taste, season with salt and pepper, and toss with mint and parsley.


SUMMER SALAD

1 lb. cucumbers
1 lb. zucchini
2 t salt
1/4 cup wine vinegar
1-1/2 lb. ripe tomatoes
Red pepper and green pepper, chopped
3/4 cup chopped red onions
1/4 C olive oil
salt and pepper
2 T chopped oregano
1/4 cup chopped parsley

Peel, seed, and chop the cucumbers. Wash and chop the zucchini. Toss them together with the salt and vinegar. Allow to sit for 30 minutes. Meanwhile, peel, and chop the tomatoes. Drain the cucumbers and zucchini and toss with the tomatoes and onions. Add oil and more vinegar to taste, season with salt and pepper, and toss with oregano and parsley.


THAI CUCUMBER SALAD

1 C water
1 C rice vinegar (white is ok too )
1 C sugar
1/2 t salt

Bring the four ingredients to a boil and simmer for 5 minutes. Allow to cool. Pour over sliced cucumbers and thinly sliced red onion. Serve immediately.
