Carrot Cake-Anna Lee

Main Ingredient: Carrots

Ingredient List

2 C flour
2 1/2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 C oil
2 C sugar
3 eggs
1 – 8oz can crushed pineapple (with juice)
2 C grated carrot
1 1/2 C coconut
1/2 C nuts (optional)


Mix flour, soda, cinnamon and salt. Beat oil, sugar, and eggs together. Add the two together until smooth. Add pineapple, carrots , coconut and nuts.
Place into 9x13 greased pan
Bake at 350 oven for 50-60 minuts

Coconut Cream Frosting

Toast 1 C coconut, cool
Cream 1 – 3oz package of cream cheese with ΒΌ C softened butter
Add 3 C confectionary sugar (1/2 at a time) with 1 tbsp milk and 1/2 tsp vanilla. Beat until smooth.
Add 1/2 of the toasted coconut.
Frost cake. Top with rest of the coconut.

Spice Icing (alternative)
Add allspice and cinnamon to a can of white frosting. Cover with toasted coconut.
